For the batter.
- 3 cups all-purpose flour.
- 2 eggs (room temperature).
- 1 cup milk (room temperature).
- 1 tsp pure vanilla extract.
- 1 tbsp baking powder.
- 1 cup of sugar
- 1 tsp salt.
- 2/3 cup butter (room temperature).
- 1/4 tsp nutmeg (optional).
For the topping.
- 3/4 cup sugar.
- 1 1/2 tsp cinnamon.
- 1/3 cup melted butter.
Cooking instructions.
- Preheat your oven to 350°F, then prepare a muffin cup (grease each cup with butter).
- Prepare a medium-sized bowl, then add the flour, baking powder, nutmeg, and salt, whisk together.
- In another bowl, beat together the sugar and butter until fluffy using a mixer. Blend in eggs until combined, then mix into the flour mixture, milk, and vanilla until well blended.
- Pour the batter into 18 cups of prepared muffins. Place in the oven, then bake for 20-25 minutes.
- While waiting for your muffins to be ready, pour 1/3 cup of melted butter into a bowl, then mix 1 1/2 teaspoons cinnamon and 3/4 sugar in another bowl.
- When your muffin turns golden, and the toothpick inserted in the center comes out clean, remove it from the oven.
- Leave your muffins for two minutes, then remove them from the muffin pan. Dip the top of your muffin into melted butter, then into the cinnamon-sugar mixture. Repeat for each muffin, and serve warm.
