To make this recipe, you will need a pair of large eggs. For oats, don't use instant oats but use old-fashioned or quick oats. How to make Blueberry Baked Oatmeal.

Get a large bowl and add all the ingredients except the blueberries. This is to prevent your oats from turning gray. Ingredients.

  • 2 cups blueberries fresh and frozen both works.
  • 2 tsp pure vanilla extract.
  • 2 cups old fashioned oats.
  • 2 large eggs.
  • 1 ½ tsp cinnamon.
  • 1 cup unsweetened applesauce.
  • ½ tsp baking powder.
  • 1/4 cup maple syrup.
  • 1/4 tsp salt
  • 1/4 cup chopped walnuts (optional).
  • 3/4 cup milk.

Directions.

  1. Prepare a large bowl. Then add the oats, maple syrup, unsweetened applesauce, eggs, milk, vanilla, cinnamon, baking powder, and salt. Stir until well blended.
  2. Prepare a greased 7 x 11-inch baking sheet. Then pour half the oat mixture into it, spread it well. Sprinkle with blueberries, chopped walnuts, or cashews if desired.
  3. Bake for 30 minutes until the tops are golden. Remove the oatmeal from the oven and let it cool for 5 minutes before serving.
  4. If you want to store leftover oats, cover your casserole dish and chill in the fridge overnight. The next morning, remove the oats from the oven and bake at 350 ° F for half an hour.
