Grilled Teriyaki Chicken Skewers Recipe
These chicken skewers are the most delicious teriyaki recipe. Grilled to perfection with teriyaki sauce, this is a super delicious Japanese dish. Here, you have to prepare boneless chicken thighs or chicken breast marinated in teriyaki sauce. Next, store in the fridge for a few hours to lock the teriyaki flavor into the chicken, then grill for dinner. Serve them with steamed rice, fried rice, or your favorite veggies.
Ingredients Needed.
The main ingredient is boneless and skinless chicken thighs. But if you have chicken breast, that's also good. Next, prepare low sodium soy sauce or regular soy sauce, cornstarch, minced fresh garlic, minced fresh ginger, brown sugar, honey, high-quality sesame oil, rice vinegar or wine vinegar and a few skewers. Lastly, prepare the chopped green onions and sesame seeds for the topping if you wish.

How to Make Teriyaki Chicken Skewers Recipe.
First, you have to make the sauce. Prepare a mixing bowl, then add water and cornstarch to it and mix well. Next, prepare a medium saucepan, then add the remaining marinade ingredients along with the cornstarch mixture. Cook over medium heat and stir frequently. Let the sauce simmer and cook until thickened and dark brown. Remove the pan from the heat, then leave the sauce to cool completely.
Place the chicken pieces in a ziplock bag and pour half the sauce into the bag. Gently shake the bag until the sauce coats the chicken, then store in the fridge for at least half an hour to marinate. Save the remaining teriyaki sauce for later.
Once marinated, place all the chicken pieces onto a few skewers and heat your grill over medium heat. Grease your grill with oil and place skewers on top. Grill your skewers for about 25 minutes and turn the skewers every three minutes until cooked. When grilled, you can baste the chicken with the remaining teriyaki sauce several times.

2 lbs thighs or chicken breasts, cut into 1" cubes.
Teriyaki Sauce for Marinate.
- 8 skewers.
- 2 tablespoon cornstarch.
- 2 cloves garlic minced.
- 1 tablespoon rice vinegar.
- 1 tablespoon honey.
- 1 cup water.
- 1/2 tablespoon fresh ginger minced.
- 1/2 teaspoon sesame oil.
- 1/3 cup soy sauce.
- 1/3 cup brown sugar.
Topping.
- Sesame seed.
- Chopped green onion.
Instructions.
- Prepare a mixing bowl, then add water and cornstarch. In a medium saucepan, add the brown sugar, soy sauce, minced garlic, minced ginger, rice vinegar or white wine vinegar, honey, and sesame oil along with the cornstarch mixture. Stir frequently to combine all the ingredients, bring the teriyaki sauce to a simmer.
- Cook your sauce over medium heat until thickened and dark brown. Remove the pan from the heat, then leave the sauce to cool completely. Place it in the fridge if necessary to speed up the cooling process.
- Prepare the chicken pieces, then put them in a Ziplock bag. Pour half the cooled teriyaki sauce into a chicken bag. Make sure the sauce coats all the chicken pieces.
- Place the chicken bag in the fridge for half an hour to marinate. Save the remaining teriyaki sauce to grill the chicken later.
- Once the marinade is complete, place the chicken pieces on a skewer and heat your grill over medium heat. When your grill is getting hot, grease it with a little oil and place a skewer on top.
- Grill the skewers for approximately 25 minutes and turn the skewers every three minutes until fully cooked. At halfway through, you can baste the chicken with the remaining teriyaki sauce.
- Once all your skewers are cooked, remove them from the grill. Sprinkle with sesame seeds and chopped green onions, then serve with your favorite foods.
